My name is Laura and I am a wife and mother of two. I discovered this recipe while searching for “wholesome recipes” on the internet. I found a sweet blog from a homeschooling Christian mother at likeabubblingbrook.com and she has some really nutritional recipes. I was blessed with two beautiful children who will eat just about anything, so needless to say they love these muffins!! They actually think they are “junk food” because of the addition of dark chocolate chips! These muffins make for a quick but healthy snack or even breakfast when paired with fruit and they keep for a few days when stored in an airtight container. My husband also likes these muffins in the morning because he can just “grab and go” and it is filling enough to get you through the morning madness. They are very easy to make, so that always helps.

Ingredients:
1 1/2 C. whole wheat flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C. chopped pecans
1/3 C. real maple syrup
2 tbsp softened butter
1 egg
2/3 C. water
1 tsp vanilla
handful of dark chocolate chips (optional)
Preheat oven to 375F. Oil a 12-cup muffin pan.
Mix flour, baking powder, and salt together. Stir in pecans.
In a separate mixing bowl, beat syrup and butter, then add the egg. Add water, vanilla.
Then add the dry ingredients a little at a time, stirring just enough to mix. Then gently stir in chocolate chips.
Spoon into muffin pan, and bake 12-15 minutes.
